Funfetti Cookies are soft butter cookies dotted with both long rainbow jimmie sprinkles and tiny rainbow perils, giving a colorful and festive appearance. They are lightly golden around the edges with a tender texture inside, balancing sweetness with a classic vanilla and almond-infused dough.

Description

The dough is created by creaming softened butter and sugar before adding vanilla extract, almond extract, and a large egg. Dry ingredients including flour, cornstarch, baking soda, and salt are sifted and gradually combined with the wet mixture. Sprinkles are folded in gently to keep their vibrant colors intact.

Balls of dough are scooped onto parchment-lined baking sheets and baked just until edges turn light golden, preserving a soft texture without crispiness. After baking, cookies rest briefly on the sheet before cooling completely on racks.

These cookies are enjoyable plain and ideal for celebrations or everyday treats. They hold their soft texture well and showcase cheerful sprinkles that remain colorful after baking.

Ingredients

  • 2 butter sticks, softened
  • 1 1/4 cups granulated sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 1 egg large
  • 2 1/2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup Sprinkles the long thin sprinkles, rainbow jimmie
  • 2 tablespoons rainbow perils tiny balls sprinkles

Instructions

  1. Preheat the oven to 375ºF. Line a large baking sheet with parchment paper or a Silpat baking mat and set aside.
  2. Using a mixer, cream the butter and sugar together for about 2 minutes, until light and fluffy. Add the vanilla extract, almond extract, and egg. Beat until well combined.
  3. In a separate bowl, sift in the flour, cornstarch, soda, and salt. Slowly add the flour mixture to the butter mixture, and continue on low speed until it’s all added and combined. Gently mix in the sprinkles, don’t over mix or the sprinkles will change the dough's color.
  4. Using a cookie scoop, scoop dough onto cookie sheets, about 1 1/2 inches apart, about 8 cookies per baking sheet. Bake for about 10-14 minutes. or until the cookies are light golden brown around the edges. You don’t want them to totally turn golden or they’ll be crisp cookies.
  5. Remove cookies from oven and let sit on baking sheet for 2 minutes. Transfer to a cooling rack and cool completely.
