Garlic Green Beans Recipe

Garlic Green Beans Recipe highlights blanched green beans quickly stir-fried with garlic and mild chillies in vegetable oil seasoned with salt, resulting in crunchy-tender beans with a fragrant, lightly spicy garlic oil coating. The method includes shocking the beans in ice water to maintain their texture and color. This preparation allows the garlic flavor to infuse the oil without burning, offering a versatile vegetable side.

Description

The recipe begins by boiling fresh green beans in salted water for about 5 minutes to reach a cooked yet firm texture. Immediately plunging them into ice-cold water stops cooking and preserves their bright green color and crispness. Garlic cloves are sliced, and mild chillies are deseeded and chopped to moderate the heat.

Vegetable oil is heated gently, and the garlic and chilli are fried on low to medium heat until the garlic becomes crunchy and golden without burning, then removed from heat to prevent overbrowning. The green beans are then quickly stir-fried in the residual oil to warm and coat them before half the garlic and chilli oil is returned, contributing flavor without overwhelming oiliness.

This dish works well as a fresh and flavorful vegetable side with subtle heat and garlic aroma. The recipe suggests serving with less oil if preferred and notes successful variations substituting other vegetables such as roasted broccoli, carrots, or cauliflower. It also recommends adding diced cooked bacon for an additional smoky dimension.

Using canned green beans is possible by warming them before adding the garlic chilli oil. Attentive handling of garlic to avoid burning is emphasized to preserve taste quality.

Ingredients

Servings
  • 1 lb green beans topped and tailed, 450g
  • 4-5 tbsp vegetable oil
  • 4 cloves garlic
  • 2 chillies very mild
  • salt

Instructions

  1. Boil the beans in some salted water for up to 5 mins depending on their size until cooked but not over done.
  2. Then plunged cooked beans into ice cold water to stop cooking, drain and set aside.
  3. Peel and slice the garlic cloves, de-seed and chop the chilli.
  4. Heat oil in a frying pan and add the garlic and chillies and season with salt. Fry on low to medium heat, stirring frequently until the garlic becomes crunchy and starts changing colour.
  5. Take off the heat immediately and poor into a cool container.
  6. In the same frying pan with only the residual leftover oil quickly stir fry beans for a min.
  7. Return the all the garlic and chilli and half the seasoned oil to the pan and mix. If you pour all the oil on the beans it might be too much so if you want to add a bit more then mix in an extra 1/2 tbsp of oil at a time.

Notes

  • Shock the cooked beans in ice-cold water to quickly stop cooking and keep them crisp and green.
  • Heat oil gently before frying garlic to infuse flavor without burning; remove garlic as soon as it turns golden.
  • Serve with less oil for milder richness, adjusting oil amount to taste.
  • Try swapping green beans with roasted broccoli, carrots, or cauliflower for variety.
  • Add diced, cooked bacon after garlic and chilli for a smoky flavor enhancement.
  • Canned green beans can be used by warming them in water before adding garlic chilli oil.
