Description

Garlic Knots transform simple pizza dough into flavorful bite-sized knots that bake to a golden brown. The dough is rolled and cut into strips, tied into knots, and baked briefly to maintain a soft center with a lightly crisped exterior. After baking, the knots are coated with a warm mixture of butter, olive oil, finely minced garlic, and flat-leaf parsley, which soaks into the knots while keeping them moist and fragrant.

Ingredients

  • 2 lbs. (1kg) pizza dough store-bought, thawed at room temperature
  • all-purpose flour for rolling out dough
  • 1 tablespoon olive oil
  • 3 tablespoons butter unsalted
  • 2 cloves garlic minced
  • 1 tablespoon flat-leaf parsley finely chopped, Italian
  • salt

Instructions

  1. Preheat the oven to 350°F (176°C). Line baking sheets with parchment paper. Divide the dough in half, keeping one half covered under a kitchen towel. On a lightly floured surface, roll out the other half with a rolling pin to create a 10-inch (25 cm) square. If the dough is very stiff, use your hands to stretch it.
  2. Using a sharp knife or pizza wheel, cut the 10-inch square in half to form two rectangles. Then, cut each rectangle into 12 strips, making sure the strips are shorter and thicker rather than longer and thinner.
  3. Tie each strip into a knot and arrange the knots on the lined baking sheets. Cover them with a kitchen towel while you repeat the rolling, cutting, and tying process with the second half of the dough.
  4. Bake the knots for 5 minutes, then rotate the baking sheet and bake for an additional 5 minutes, or until they are golden brown and fully cooked.
  5. While the knots bake, grate the garlic cloves using a Microplane and combine them with olive oil and butter in a small saucepan over low heat. Cook just until the butter has melted and the mixture is warmed. Remove from heat and stir in the chopped parsley.
  6. Immediately after baking, brush the knots with the garlic mixture and sprinkle with kosher salt. Serve warm.
