Garlic Parmesan Roasted Shrimp
Description
In this recipe, peeled and deveined medium shrimp are placed in a single layer on a baking sheet coated with oil or nonstick spray. The shrimp are tossed with olive oil, garlic, oregano, basil, salt, pepper, and freshly grated Parmesan, ensuring each piece is well seasoned. Roasting in a 400-degree oven for 6 to 8 minutes cooks the shrimp quickly, turning them pink and firm with a hint of golden edges from the cheese. Finishing with fresh lemon juice adds acidity and brightness that contrasts with the richness of garlic and Parmesan. The dish is garnished with freshly chopped parsley for a mild herbal note. Ingredients
- 1 pound Shrimp peeled and deveined, medium
- 2 tablespoons olive oil
- 4 cloves garlic minced
- ½ teaspoon oregano dried
- ½ teaspoon basil dried
- ¼ cup Parmesan Cheese freshly grated
- salt to taste, Kosher salt and freshly ground
- black pepper to taste, Kosher salt and freshly ground
- lemon juice of 1
- 2 tablespoons parsley for garnish, chopped leaves
Instructions
- Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
- Place shrimp in a single layer onto the prepared baking sheet. Add olive oil, garlic, oregano, basil and Parmesan; season with salt and pepper, to taste. Gently toss to combine.
- Place into oven and roast just until pink, firm and cooked through, about 6-8 minutes. Stir in lemon juice.
- Serve immediately, garnished with parsley, if desired.
