Ingredients

Servings
  • 2 tbsp quick oats
  • 1 tbsp cocoa powder unsweetened
  • 1/4 tsp baking powder
  • 1 packet truvia sweetener
  • 1/4 tsp vanilla extract
  • 2 tbsp + 1 tsp applesauce unsweetened
  • 1 egg white

Frosting:

  • 2 tbsp vanilla yogurt I used Activia, light
  • 2 tbsp sweetened coconut flakes
  • 1 tbsp pecans finely chopped or ground
  • 1 packet truvia sweetener
  • 1/4 tsp caramel extract

Instructions

  1. In a small bowl, combine all frosting ingredients.  Set aside.
  2. In another bowl, combine all mug cake ingredients.
  3. Spray the inside of a large mug with non-stick cooking spray.  Pour cake mixture into the mug and microwave on high for 2 minutes and 15 seconds.
  4. Remove the cake from the mug and allow to cool for about a minute.  Cut the cake into two layers and frost between layers and on top.  Serve immediately.
