Ingredients

  • 1 1 loaf cocktail or party size Rye bread 35 slices
  • 1 1 pound ground beef
  • 1 1 pound ground Italian sausage
  • 1 1 teaspoon oregano
  • 1 1 teaspoon Worcestershire sauce 
  • 1/2 1/2 teaspoon garlic powder
  • 5 5 Tablespoons unsalted butter
  • 5 5 Tablespoons all-purpose flour
  • 2 ½ 2 ½ cups whole milk warmed
  • 1/4 1/4 teaspoon mustard powder
  • 1/4 1/4 teaspoon white pepper
  • 2 2 cups cheddar cheese freshly shredded
  • salt to taste
  • parsley for topping (optional)

Instructions

  1. Pre-heat oven to 325° and arrange rye bread slices on a baking sheet.
  2. Heat a large skillet or saute pan over medium-high heat. Add the ground beef and sausage. Break apart with a spoon and cook until brown (let it rest some to create a nice Maillard reaction). Season with salt as it's cooking to layer in flavor.
  3. Once cooked, drain the excess fat, then stir in the oregano, Worcestershire sauce, garlic powder, and additional salt and pepper as needed. Remove from heat and set aside.
  4. In a separate skillet or saucepan, create a roux by melting the butter over medium heat. Whisk in the flour and continue cooking for a few minutes to get the flour taste to cook out. Slowly whisk in warmed milk. Whisk in mustard powder and white pepper. Remove from heat.
  5. Add shredded cheese 1/2 cup at a time, stirring to melt in between additions. Stir in the meat mixture until completely combined.
  6. Top rye bread slices with meat mixture. Bake for 15 minutes. Top with chopped parsley, if desired, and serve immediately.

Notes

  • Freshly shredded cheese will melt best!
