Ingredients

  • 1 lemongrass large stalk, outer leaves removed and sliced
  • 2-3 tbsp ginger sliced, peeled
  • 6 rooibos tea red bush) tea bags
  • 1 water 1 litre
  • 3 tbsp honey
  • ice
  • lime slices
  • mint

Instructions

  1. Put the lemongrass, ginger and water in a pot and bring to the boil.
  2. Let boil for 1 min and then switch off the heat.
  3. Add in the tea bags and let steep for 10 mins before discarding the tea bags.
  4. Stir the honey into the warm tea and set aside to cool before refrigerating for a few hours.
  5. Strain the mixture and discard the bits, fill the glasses with ice, pour in the tea and garnish with mint.

Notes

  • Adjust the amount of lemongrass, ginger, and honey based on your personal taste preferences.
