Ingredients
Almond Cookies:
- 1 cup unsalted butter room temperature
- ¾ cup white sugar
- 1 tsp almond extract
- 2 cups flour
- ½ tsp baking powder
- ¼ tsp salt
Almond Glaze:
- ¾ cup powdered sugar
- ½ tsp almond extract
- 4-5 tsp milk to taste
Instructions
- Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
- Make the cookies by beating the butter, sugar, and almond extract with a hand mixer until creamy and smooth.
- In a separate bowl, whisk the flour, baking powder, and salt until well combined.
- Add the flour mixture to the butter mixture 2 tablespoons at a time (important!!) until completely combined.
- Drop tablespoon-sized balls on the cookie sheet a few inches apart.
- Flatten them slightly with the palm of the hand.
- Place into the oven and bake for 7 minutes, they will not look done.
- Remove from the oven and immediately place a few almond slices on each cookie.
- Allow the cookies to cool for a few minutes on the baking sheet before moving them to cool completely on wire racks.
- Make the glaze by combining the powdered sugar, almond extract, and milk together until creamy and smooth.
- Once the cookies have cooled completely, place the rack of cookies over parchment paper and drizzle frosting with a spoon on top of each cookie, to taste.
- Let cookies sit until the icing has set.
- Store sealed in the refrigerator. Enjoy!
