Maple Glazed Apple Oatmeal Cookies

These oatmeal cookies are packed with shredded apples, warm spices and topped with a simple maple glaze. Perfect little bites and the cookies are so soft and chewy!

Ingredients
- 1 cup all-purpose flour
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup butter softened
- 1/2 cup brown sugar
- 1/4 cup sugar
- 1 egg large
- 1 tsp vanilla extract
- 1 large apple peeled and shredded (See Note 1)
- 1 3/4 cup rolled oats
Glaze
- 3/4 cup powdered sugar
- 1 tbsp maple syrup
- 1 tbsp milk

Instructions
- Preheat oven to 350°F.
- In a small bowl combine flour, spices and salt.
- Peel and shred apple with cheese grater. Squeeze excess juice and drink or save for later use. Set aside.
- In a large bowl beat the butter and sugars until smooth. Add the egg and vanilla. Stir in the flour and spice mixture, oats and apples. Using a two tablespoon scoop place dough on cookie sheets lined with parchment or silicon baking sheet.
- Bake for 10-12 minutes. Allow to cool on the sheet for 5 minutes and transfer to a rack to cool.
- In a small bowl add powdered sugar, maple syrup and milk. Carefully stir to incorporate and drizzle over cookies.
Notes
- I use Honey Crisp apple, feel free to use Granny Smith or other firm apple.
