Glazed Lemon Butter Cookies

These Glazed Lemon Butter Cookies combine a buttery dough with a bright lemon flavor for a tender and slightly crisp cookie. The dough is rolled thin and cut into bite-sized rounds, then baked until just golden at the edges. A lemon glaze made from powdered sugar and fresh lemon juice gives the cookies a sweet, tangy finish that balances the rich butter base.

Description

Glazed Lemon Butter Cookies offer a sweet and tangy treat centered on the buttery cookie foundation enhanced with lemon extract. The dough is chilled before rolling thin to ensure a tender texture and maintain shape during baking. The cookies bake quickly until the edges turn lightly brown, preserving a soft center with crisp edges. The lemon glaze, made by whisking powdered sugar with fresh lemon juice, is dipped onto the tops after baking, adding a smooth, glossy coating that dries firm. These cookies can be enjoyed alongside tea or coffee, or as part of a dessert platter.

The recipe requires chilling the dough for 2 hours, which helps develop flavor and makes it easier to roll and cut. When glazing, dipping each cookie individually ensures an even coating. Allow the glaze to set completely before stacking or storing the cookies to maintain their appearance.

Ingredients

Servings

For the cookies:

  • 1 cup butter softened
  • 2 cups granulated sugar
  • 2 egg lightly beaten, large
  • ¼ cup milk
  • 2 tsp. lemon extract
  • 4 ½ cups all-purpose flour
  • 2 tsp. baking powder
  • ½ tsp. salt
  • ¼ tsp. baking soda

For the glaze:

  • 2 cups powdered sugar
  • ¼ to ⅓ cup lemon juice fresh squeezed

Instructions

  1. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs, milk and lemon extract.
  2. In a separate bowl, combine the flour, baking powder, salt and baking soda. Gradually add the dry ingredients to the creamed mixture and mix well. Cover and chill for 2 hours.
  3. Preheat oven to 350°F.
  4. Roll dough out on a lightly floured surface to 1/8-inch thickness. Cut with a 2-inch cookie cutter dipped in flour. Place 2-inches apart on ungreased baking sheet.
  5. Bake for 8-10 minutes or until the edges just begin to brown. Allow cookies to cool for 3 minutes on the baking sheet before transferring to wire racks to cool completely.
  6. In a medium bowl, whisk together the powdered sugar and lemon juice until smooth. Dip each cookie top into the glaze. Return to the wire rack, glaze side up. Let cookies set until icing has set.
