Ingredients
- 1 prepared pie crust homemade or store bought (1 deep dish or 2 regular)
- 1 pound 2 medium sweet potatoes approx 2 ½ cups mashed
- 1/2 cup butter melted
- 2/3 cup evaporated milk
- 3/4 cup brown sugar packed
- 1 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/8 teaspoon ground cloves
- 1/2 cup pecan halves
- 1 cup Cool Whip optional

Instructions
- Heat the oven to 350°. Bake the pie crust for 15 to 20 minutes, just until lightly golden in color. Remove and cool completely.
- Bake the sweet potatoes until fork tender - 45 to 50 minutes. (Other options in the section above.) Scoop out and mash the sweet potatoes.
- Place the sweet potatoes in a large bowl, add the melted butter and beat with hand mixer until combined.
- Add the evaporated milk, brown sugar, eggs, vanilla and spices and beat until combined.
- Pour the filling into the cooled pan. Add pecan halves over the pie to decorate.
- Bake for 50 minutes to 1 hour. Poke a toothpick into the middle. If a toothpick comes out clean the pie is done. There may be just a slight jiggle to the pie.
- Cool and serve with cool whip.
Notes
- Storing: Any leftover sweet potato pie can be stored in an airtight container in the refrigerator for up to 3 days.
- Freezing: You can wrap individual pieces in plastic wrap and freeze the pie in a freezer-safe, airtight container for up to 3 months.
