  • 1 prepared pie crust homemade or store bought (1 deep dish or 2 regular)
  • 1 pound 2 medium sweet potatoes approx 2 ½ cups mashed
  • 1/2 cup butter melted
  • 2/3 cup evaporated milk
  • 3/4 cup brown sugar packed
  • 1 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground cloves
  • 1/2 cup pecan halves
  • 1 cup Cool Whip optional

Instructions

  1. Heat the oven to 350°.  Bake the pie crust for 15 to 20 minutes, just until lightly golden in color.  Remove and cool completely.
  2. Bake the sweet potatoes until fork tender - 45 to 50 minutes.  (Other options in the section above.) Scoop out and mash the sweet potatoes.
  3. Place the sweet potatoes in a large bowl, add the melted butter and beat with hand mixer until combined.
  4. Add the evaporated milk, brown sugar, eggs, vanilla and spices and beat until combined.
  5. Pour the filling into the cooled pan.  Add pecan halves over the pie to decorate.
  6. Bake for 50 minutes to 1 hour.  Poke a toothpick into the middle.  If a toothpick comes out clean the pie is done.  There may be just a slight jiggle to the pie.
  7. Cool and serve with cool whip.

Notes

  • Storing: Any leftover sweet potato pie can be stored in an airtight container in the refrigerator for up to 3 days.
  • Freezing: You can wrap individual pieces in plastic wrap and freeze the pie in a freezer-safe, airtight container for up to 3 months.
