Grandma's Potatoes
Description
This recipe uses frozen hash browns mixed into a smooth base of melted butter, cream of chicken soup, and sour cream. Cheddar cheese and sliced green onions incorporate sharp and fresh notes to the creamy mixture. The casserole spreads evenly in a pan and spends about an hour baked, allowing the potatoes to soften and the flavors to meld.
After baking, the dish is topped with cheddar-flavored fried onions and baked briefly more, adding a crispy, savory topping that contrasts with the creamy layers beneath. Garnishing with extra green onions provides some brightness.
Grandma’s Potatoes works well as a side dish for family meals or potlucks. The texture balances soft, creamy potatoes with crispy fried onions to add interest.
Alternatively, crushed cornflakes sautéed in butter can substitute the fried onions for a different crunchy topping, baked for the entire initial baking time.
Ingredients
- potato frozen diced hash brown, bagged
- cream of chicken soup canned
- ½ cup butter 1 stick, unsalted
- sour cream container, 8-ounce
- 2 cups cheddar cheese shredded
- ¼ cup green onion plus more for garnish, sliced
- fried onions cheddar flavored, container 6-ounce
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, add the stick of butter, sour cream, and cream of chicken soup. Microwave and melt completely, about 1 -2 minutes. Stir to combine.
- Add hash browns, cheddar cheese, and green onions to the sour cream mixture. Mix well to coat all of the hash browns. Transfer to a 9x13 pan and spread into an even layer.
- Bake, uncovered, for 55-60 minutes
- Top the potatoes with a container of cheddar french fried onions.
- Bake for an additional 5-10 minutes (start checking at 5 mins)
- Remove from the oven and sprinkle with more green onion. Serve warm.
Notes
- For a topping alternative, sauté crushed cornflakes in butter and bake them on top of the casserole during the initial cooking time instead of using fried onions.
