Our Greek braised beans have a delicious broth with garlic, and cherry tomatoes. Serve the beans with crumbled feta and crusty bread for a cozy, rustic meal or as part of a fantastic Greek meze feast.

Ingredients
- ¼ cup extra virgin olive oil
- ⅔ cup onions diced
- 2 garlic cloves minced
- ⅔ cup carrots cut in coins
- 20 cherry tomatoes sliced
- 3 cans butter beans or 1¼ cups dried butter beans soaked overnight and drained
- 2 cups broth can be chicken or vegetable
- ¼ cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 tablespoon fresh parsley roughly chopped
- sea salt
- freshly ground pepper
Serving
- ½ cup feta crumbled
- fresh parsley roughly chopped
- chili flakes optional
Instructions
- Heat the olive oil in a skillet over medium heat. Saute the carrots with the onions and garlic for 3-4 minutes, until the onions are fragrant.¼ cup extra virgin olive oil ⅔ cup carrots ⅔ cup onions
- Add the tomatoes, butter beans, sea salt, pepper, and about two cups of water, and cook on high heat for 20-25 minutes until they have developed a nice brothy sauce.20 cherry tomatoes 3 cans butter beans 2 cups broth sea salt freshly ground pepper
