Greek Lamb Tacos with Tzatziki Sauce

These Greek Lamb Tacos come together in only 30 minutes and are packed full of Mediterranean flavor! Topped with homemade tzatziki sauce and fresh cucumbers, tomatoes, onions, and feta cheese.

Ingredients
For the Lamb:
- 2 tablespoons extra-virgin olive oil
- 1 small yellow onion finely diced
- 2 cloves garlic minced
- 2 tablespoons fresh oregano leaves chopped (or 2 teaspoons dried)
- 1 lb. ground lamb
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
For the Tzatziki Sauce:
- 1/2 cucumber peeled, seeded, and grated
- 1 cup Greek yogurt
- 1/4 teaspoon kosher salt more if needed
- 1 tablespoon extra-virgin olive oil
- 1 small garlic clove minced
- 1 tablespoon chopped fresh dill
- 1 tablespoon fresh lemon juice from about 1/2 of a small lemon
For the Tacos:
- 4 Mission® Super Soft Flour Tortillas warmed
- 1/2 cucumber diced
- 1 cup fresh tomatoes diced
- 1/2 cup red onion diced
- 4 oz. feta cheese crumbled

Instructions
- To cook the lamb: Heat the olive oil (2 tablespoons) in a nonstick skillet and cook the yellow onion over medium-high heat until softened and beginning to brown (about 2 minutes). Add the minced garlic and chopped oregano (2 tablespoons) and sauté until fragrant (about 30 seconds). Add the lamb and cook completely, breaking it up as you go (about 5 minutes). Season with 1/2 teaspoon of kosher salt and 1/4 teaspoon of black pepper.
- To make the Tzatziki Sauce: Squeeze as much water out of the grated cucumber as possible using a clean kitchen towel (see notes). In a small bowl, mix together the Greek yogurt (1 cup), 1/4 teaspoon kosher salt, 1 tablespoon olive oil, 1 minced small clove of garlic, fresh chopped dil (1 tablespoon)l, and lemon juice (1 tablespoon). Add the cucumbers and stir.
- To assemble the tacos: Spread 1/4 cup of the tzatziki sauce on each tortilla, followed by 1/4 of the lamb mixture, and the diced cucumber, fresh tomatoes, and red onion divided evenly. Finish with 1 oz. of crumbled feta on each taco.
- Serve immediately, wrapped in foil or held together with a toothpick if desired.
Notes
- You can read my full recipe for Tzatziki Sauce, which explains how to very effectively get all the water out of the cucumbers (but squeezing it out for the purposes of this recipe is fine).
- Time Saving Tip: Many grocery stores sell prepared Tzatziki sauce, or something similar, near where the hummus is.
- Money Saving Tip: Ground beef can be used as an alternative to ground lamb, if you can't find any or if you are looking for a more budget-friendly option.
