Ingredients

  • ½ cup butter 1 stick), melted, unsalted
  • 2 egg
  • 1 cup sour cream
  • 1 14.75-ounce can cream-style corn
  • 1 cup corn kernels fresh or frozen (thawed)
  • 1 4-ounce can diced green chiles drained
  • 1 cup Mexican blend cheese shredded
  • ¼ teaspoon salt
  • 1 8.5-ounce box Jiffy corn muffin mix

Instructions

  1. Preheat oven to 375°F. Grease a 1 ½ quart baking dish.
  2. In a large bowl, whisk together the melted butter, eggs, and sour cream. Stir in the cream-style corn, corn kernels, green chiles and cheese. Mix to combine. Add the salt and corn muffin mix. Stir until well combined.
  3. Pour the mixture into the prepared baking dish and use a spatula to smooth the top. Bake for 40-55 minutes or until golden brown and the center is set.
