Grilled Cilantro Lime Chicken

Ingredients

  • 4 boneless chicken breasts
  • 6 tablespoons olive oil
  • 2 1/2 tablespoons raw honey
  • 4 large garlic cloves minced
  • 1 bunch fresh Cilantro minced
  • 3 limes juiced
  • 2 -3 teaspoons kosher salt to season chicken

Instructions

  1. Generously salt both sides of the chicken breasts and place in a large zip lock bag or food saver bag.
  2. In a medium bowl, mix the remaining ingredients.
  3. Add mixture to the bag with the chicken and carefully move around the chicken in the bag to ensure they are all coated with the marinade.
  4. Remove as much air as possible from the bag, seal, and marinate for at least 2 hours and up to 2 days.
  5. Grill for about 7-9 minutes on each side, until internal temp is 165 degrees F or juices run clear.
  6. Serve immediately and enjoy!

Notes

  • Fresh cilantro is key, but if you do have to used dried, be sure to use about 1 tablespoon of fresh to 1 teaspoon of dried ratio.  For this recipe a bunch of fresh cilantro is about 3/4 cups, which is 12 tablespoons.  12 tablespoons to 12 teaspoons = 4 tablespoons.
