Grilled Lime Cilantro Shrimp Skewers

Tender shrimp in a zesty lime cilantro marinade, grilled to perfection and served with a creamy avocado dipping sauce!

Ingredients

  • 1 ½ pounds jumbo shrimp raw, peeled, deveined with tails on
  • ¼ cup olive oil
  • 1 tablespoon fresh cilantro chopped
  • 2 garlic cloves grated
  • Juice and zest of 1 lime
  • 1 teaspoon smoked paprika
  • ¼ teaspoon ground cumin
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon salt
  • Optional: Avocado Lime Cilantro Ranch Dressing for dipping

Instructions

  1. Add all the ingredients except the shrimp and dipping sauce to a measuring cup or bowl, then whisk until combined.
  2. Add your shrimp in a food storage bag and pour the marinade over the shrimp. If you're using bamboo skewers you'll want to be sure and soak them in water to prevent burning while they're on the grill.
  3. Seal up the bag and let marinate in the fridge for 30 minutes.
  4. Add the shrimp to your skewers. Place the shrimp on the grill for a few minutes on each side. They cook fast so watch them closely as to not burn them. Garnish the shrimp with fresh cilantro and wedges of lime.
  5. Garnish with fresh cilantro and wedges of lime.  Serve along side Lime Cilantro Cauliflower Rice or my Lime Cilantro Broccoli Slaw.  You can even serve over a salad with my Avocado Lime Cilantro Ranch Dressing!

Notes

  • Macros do not include the avocado dipping sauce.  Be sure to adjust macros according to the sauce you serve the shrimp with.
