Ground Beef Enchiladas

Filled with beef, refried beans, and cheese, these Ground Beef Enchiladas are a Tex-Mex favorite! These enchiladas only take a few ingredients, and are easy enough for a weeknight.

  • 1 pound ground beef
  • 3 tablespoons taco seasoning
  • 1 cup water
  • 1 (16 oz) can refried beans
  • 1 (28 oz) can Red Enchilada Sauce
  • 10 8-inch flour tortillas
  • 6 oz cheddar cheese shredded
  • 6 oz Monterey jack cheese shredded
  • Cilantro and green onions for serving

Instructions

  1. Preheat the oven to 350ºF. Spray a 9x13-inch baking dish with nonstick cooking spray.
  2. Heat a large skillet over medium-high heat and add the ground beef. Cook, breaking it up as it cooks, until browned and cooked through.
  3. Sprinkle the taco seasoning over the top of the beef, then pour in the water. Mix everything together, and let it cook, stirring often, until most of the water has evaporated, about 5 minutes.
  4. Stir the refried beans into the ground beef mixture. Once heated through, turn off the heat.
  5. Pour about 1/2 cup of the enchilada sauce in the bottom of the prepared pan.
  6. Spread some of the ground beef filling down the center of a tortilla. Add about 1 tablespoon of cheddar cheese and 1 tablespoon of the Monterey Jack cheese on top of the ground beef mixture. Roll the tortilla up and place seam side down in the prepared baking dish. Repeat with the remaining tortillas and beef filling.
  7. Pour the remaining enchilada sauce over the top of the rolled enchiladas. Sprinkle with the remaining cheese. 
  8. Bake in the preheated oven until the cheese is melted and the sauce is bubbling, about 25-30 minutes.
  9. Serve topped with fresh cilantro and sliced green onions.
