Ham And Cheese Loaf

The Ham and Cheese Loaf features a soft bread dough kneaded with sugar and yeast, enriched with egg, milk, and butter, then filled with layers of thinly sliced deli ham, cheddar cheese, and thinly sliced onion. The shaped dough rolls create a savory layered loaf with melted cheese and savory ham throughout, ideal for sliced sandwiches or snacks. The dough's elasticity and proofing ensure a tender crumb balanced with flavorful fillings.

Description

This Ham and Cheese Loaf starts with a yeast-based bread dough mixed with sugar for fermentation, bread flour, salt, an egg, warm milk, and unsalted butter for richness. After kneading and a first proof to develop structure and volume, the dough is divided into smaller portions then rolled flat. Each piece is layered with deli ham slices, cheddar cheese, and thinly sliced yellow onion to distribute savory flavors evenly. The dough is then rolled up to encase the fillings, creating layers within the loaf. The rolls are cut and positioned before baking in a moderately heated oven. The finished loaf offers a soft yet slightly chewy bread surrounding melted cheddar and savory ham and onion, making it suited for slicing and serving as a hearty snack or part of a meal.

Ingredients

Servings

Bread Dough

  • 2 1/2 tablespoons granulated sugar
  • 1 teaspoon active dry yeast
  • 2 1/4 cups bread flour
  • 1/4 teaspoon salt
  • 1 egg
  • 3/4 cup milk warm
  • 1 1/2 tablespoons butter unsalted

Bread Filling

  • 2 teaspoons mayonnaise Japanese Kewpie brand
  • 6 oz (175 grams) deli ham thinly-sliced
  • 8 lices cheddar cheese
  • 1/2 yellow onion sliced, small

Instructions

  1. Preheat the oven to 356°F (180°C). In a small bowl, dissolve the sugar and yeast in warm milk, stir well, and set aside for 5 minutes. In a large mixing bowl, combine the flour, salt, egg, and the milk mixture, then mix well with a spatula.
  2. Using a stand mixer with the paddle attachment, knead the dough on medium-high speed for 5 minutes until smooth. Add the butter and continue kneading at the same speed for 15 minutes, or until the dough is elastic. Cover the dough with a cloth or plastic wrap and let it rise in a warm place for 1 hour, or until it has doubled in size.
  3. After the first proof, transfer the dough to a floured surface. Gently press it to release the air. Divide the dough into three equal pieces and cover with plastic wrap. Let it rest for 15 minutes.
  4. Flatten and shape each piece of dough into an oval using a rolling pin. Place two slices of ham and cheese horizontally on the dough. Then, roll it up and pinch the seams to seal.
  5. Cut the dough evenly in half using a dough cutter or knife, then transfer the pieces to the loaf pan with the cut side facing up. Cover and let it rise until doubled in size, about 1 hour.
  6. After proofing, spread mayonnaise over the top of the dough and sprinkle with cheddar cheese and onion slices. Bake for 40 minutes, or until the edges are golden brown. Serve warm or at room temperature.

Notes

  • This recipe originates from Eat with Jean, providing a tried and tested method for a savory bread loaf.
  • Using thinly sliced deli ham and cheddar cheese distributes flavor evenly through the loaf and helps with melting.
  • Warm milk aids yeast activation and creates a tender crumb in the bread dough.
  • Ensure the dough proofs until doubled to get proper rise and softness in the loaf.
