Description

The recipe starts by slicing each medium sweet potato thinly about 1/8 inch apart, leaving the bottom intact to hold the slices together. The potatoes are coated with a compound butter containing olive oil, melted unsalted butter, minced garlic, chopped herbs like parsley, chives, thyme, rosemary, paprika, salt, pepper, and a pinch of nutmeg.

Baked at a high temperature on a foil-lined sheet, the potatoes first cook for 40 minutes before being brushed again with more herb butter. After returning to the oven for an additional 10 to 20 minutes, the thin slices become tender and flavorful while edges gain a slight crispness. The garlic and herbs permeate through the layers, enriching the sweet, creamy flesh.

This technique differentiates the dish from simply baked sweet potatoes by offering an appealing texture contrast between crisp edges and soft center slices. It pairs well with creamy toppings such as herb goat cheese or sour cream, which complement the herbed butter and add richness.

  • 4 sweet potato medium, garnet yams as alternative

Herb Butter

  • 2 tablespoon olive oil
  • 6 tablespoons butter melted, unsalted
  • 4 garlic minced, cloves
  • 1 tablespoon parsley finely chopped (or 1 tsp. dried, fresh
  • 1 tablespoon chives or 1 tsp. dried, fresh, finely chopped
  • 1 teaspoons thyme leaves or heaping 1/4 tsp. dried, fresh, finely chopped
  • 1 teaspoon rosemary or heaping ¼ tsp dried, finely chopped
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • pinch ground nutmeg

Instructions

  1. Preheat the oven to 425 degrees F. Line a baking sheet with aluminum foil and spray with nonstick cooking spray.
  2. Wash and dry potatoes. Make a series of 1/8-inch slices along the top of each potato, stopping 1/2 inch from the bottom.
  3. Stir together all of the Herb Butter ingredients. Brush the potatoes all over (including the bottoms), and in between the slices with half of the Butter.
  4. Bake sweet potatoes on prepared baking sheet for 40 minutes then remove from oven. Reheat butter if necessary then brush all of the remaining Butter all over sweet potatoes, including in between slices (I use a fork to fan out the slices).
  5. Return to oven and bake another 10-20 minutes OR until the center potato slices are very tender. Brush baked potatoes with any remaining butter that has accumulated at the bottom of the pan.
  6. Serve with Herb Goat Cheese or Sour Cream.
