High Protein Stir Fry Veggies with Tofu

This easy, delicious recipe is completely customizable and is a healthy (high protein) lunch or dinner option.

Ingredients

  • 1 tbsp sesame oil
  • 1- 180 g tofu smoked, package
  • 2 tbsp sesame oil
  • 2 garlic minced, cloves
  • 2 cups Napa cabbage shredded
  • 2 cups edamame shelled
  • 1 bell pepper thinly sliced, large
  • 1 carrot shredded, large
  • 3 green onion sliced, sprigs
  • 3 tbsp basil chopped
  • 3 ramen noodles cooked, Lotus Foods brand or vermicelli
  • For the sauce
  • 4 tbsp oyster sauce vegan
  • 3 tbsp tamari
  • 2 tbsp sesame oil
  • 1 tbsp maple syrup
  • 2 tsp rice wine vinegar
  • 1 tsp vegetable stock paste
  • cup water

Instructions

  1. Add the first amount of sesame oil to a pan over medium high heat. 
  2. Cut the tofu into cubes, add to the pan, and cook until golden brown. Set aside.
  3. Cook the Lotus Foods Ramen and set aside.
  4. Combine all of the ingredients for the sauce in a medium sized bowl and set aside. 
  5. Prepare all of the vegetables for stir fry.
  6. Add all of the veggies(except the basil) to a large pan over medium-high heat with the second amount of sesame oil.
  7. Stir and cook the veggies until lightly browned and tender. About 10 minutes. 
  8. Add the smoked tofu and the sauce to the veggies.
  9. Combine and cook for another 5 minutes until everything is coated in sauce and thickens slightly. 
  10. Serve with fresh basil on top- so delicious!
