Homemade Cheese Fondue
Report
Easily make a restaurant-quality cheese fondue with Gruyere and sharp cheddar to go with all your favorite dippers. Smooth, melty perfection!

Ingredients
- 1 whole garlic clove peeled
- 1 cup white wine
- 1/2 cup chicken broth
- 16 ounces shredded gruyere cheese
- 8 ounces shredded sharp cheddar cheese
- 2 teaspoons cornstarch
- 1/2 teaspoon ground nutmeg
Instructions
- Rub the inside of the fondue pot or medum (3-quart) saucepan with the 1 whole garlic clove. Discard garlic or reserve for another use.
- Add 1 cup white wine and 1/2 cup chicken broth. Heat over medium heat until nearly boiling.
- In a medium mixing bowl, toss 16 ounces shredded gruyere cheese and 8 ounces shredded sharp cheddar cheese with 2 teaspoons cornstarch. Sprinkle with 1/2 teaspoon ground nutmeg.
- Gradually add the cheese mixture to the hot liquid, stirring constantly with a spoon or silicone spatula. Continue cooking over medium-low heat until cheese is fully melted and the mixture is smooth, about 5 to 7 minutes.
- Maintain gentle heat to keep the fondue smooth. If the fondue becomes too thick, stir in additional broth or wine, 1 tablespoon at a time, until the desired consistency is reached.
- Serve immediately with any and all of your favorite dippers!
Notes
- Be sure to shred your own cheese for the smoothest texture. The anti-caking agents in pre-shredded cheese will create a gritty texture.
- Keep the heat low once the cheese has melted to prevent separation.
- This recipe yields about 4 cups of fondue.
