Homemade Dinner Rolls + Tutorial
Description
This recipe begins by mixing yeast with warm milk, eggs, sugar, salt, softened butter, and an initial portion of flour. Once combined, remaining flour is kneaded using a mixer until the dough is elastic and non-sticky. The dough is then left to proof in a warm moist environment created by placing it near a cup of hot water inside the microwave (turned off), allowing it to double in size over 20 minutes.
After proofing, the dough is divided into approximately 20 equal portions, rolled into balls, and placed in a greased baking pan. The rolls are arranged so they do not touch, ensuring proper rising and even baking. Once baked, they are brushed with melted butter and sprinkled with coarse salt to add texture and flavor to the crust.
The rolls are ideal for serving fresh alongside main dishes and can be proofed in the refrigerator overnight for baking the next day. Using lukewarm milk is critical for activating yeast properly without killing it.
Ingredients
For Rolls
- 1 1/4 cups milk warm, quantity 1 cup
- 1 packet instant yeast
- 1/4 cup sugar
- 2 egg beaten, large
- 1 1/2 teaspoons salt
- 4 1/2 cups bread flour
- 4 tablespoons butter softened, unsalted
For topping
- 2 Tablespoons butter melted
- kosher salt or any other coarse salt
Instructions
- In the bowl of a standing mixer** place the yeast, warm milk, eggs, salt, sugar, butter and 1 cup of the flour. Mix manually with a whisk until combined
- Place the dough hook on the mixer and add the rest of the flour. Mix on medium - low speed for 6-7 minutes to knead the dough
- Dough should be elastic and not sticky
- Grease a bowl with non-stick spray or oil. Place the dough in the bowl
- Cover the bowl with plastic paper and then with a clean kitchen towel
- Heat a cup of water in the microwave until it starts boiling
- Open the microwave door, move the cup of water to the back and place the bowl with the dough in the middle
- Close the microwave door and let the dough proof for 20 minutes (dough should double its size). DO NOT TURN ON THE MICROWAVE
- Remove dough from microwave and cut into 20 equal parts. Roll them into balls
- Grease a large rectangular baking pan
- Place the dough balls in the pan. Dough balls shouldn't be touching each other. If they are, get a bigger pan or use a second pan. Cover pan with plastic paper and a tea towel
- Heat a cup of water in the microwave until it starts boiling
- Open the microwave door, move the cup of water to the back and place the covered baking pan. If pan does not fit, simply let it proof inside an oven (as long as it's turned off). Let dough proof for 15-20 minutes
- Preheat oven to 375 degrees Fahrenheit
- Remove baking pan from microwave and brush each roll with the melted butter. Sprinkle the salt on each one
- Bake for 20 minutes or until golden brown on top

Notes
- Milk temperature should be lukewarm, around 100°F, to activate yeast without killing it.
- Active kneading with a mixer shortens time, but kneading by hand is possible with longer kneading needed.
- Proofing dough in the refrigerator overnight allows flexible baking timing the next day.
