Homemade Grenadine Syrup, Sugar-Free

Ingredients

  • pomegranate molasses
  • 2 cups pomegranate juice 100%
  • 1/4 cup sugar I used sugar-free xylitol
  • 1 1/2 teaspoons lemon juice freshly squeezed
  • grenadine
  • 2 cups pomegranate juice 100%
  • 2 cups sugar I used sugar-free xylitol
  • 2 oz. pomegranate molasses purchased or homemade
  • 1 teaspoon orange blossom water

Instructions

  1. To make molasses, place the juice, sugar and lemon juice in a saucepan. Over medium heat, stir occasionally until the sugar has completely dissolved. Once the sugar has dissolved, reduce the heat to medium-low and cook for about 45 minutes, reducing until it becomes a syrup. Put aside and let cool.
  2. For the grenadine syrup, put 2 cups of pomegranate juice in a saucepan and add the sugar, stirring until the sugar dissolves and no sugar grains can be seen. Add two ounces of the molasses and 1 teaspoon of the orange blossom water. Stir until everything is dissolved.
  3. Let cool and bottle.

Notes

  • If you are using fresh squeezed pomegranate juice, you will need approximately 2 large pomegranates. I used bottled Knudsen brand, 100% pomegranate juice. POM Wonderful is another brand that's readily available. If you want to use regular sugar, the same ratio remains, 2 cups for the grenadine and 1/4 cup for the molasses. Pomegranate molasses and orange blossom water are specialty items often in Mediterranean or Latin markets. I made my own molasses and purchased the orange blossom water at Marshall's store. Add one ounce of vodka as an optional preservative if you don't think you'll use the syrup within a month.
