Homemade Hot Cocoa - Extra thick!

This extra thick homemade hot cocoa blends cocoa powder, sugar, and milk chocolate to create a rich, creamy drink with a glossy finish. Cornstarch slurry is added to thicken the mixture without lumps, giving the cocoa a velvety texture. The combination of simmered milk and melted milk chocolate makes for a comforting chocolate beverage that is denser than standard hot chocolate, suitable for sipping from a warmed mug.

Description

The Homemade Hot Cocoa - Extra thick! recipe begins by mixing cornstarch with a small portion of milk to form a smooth slurry, preventing lumps during thickening. Cocoa powder and sugar are combined separately. Heated milk is simmered and stirred as the cocoa and sugar mix is added, dissolving thoroughly. The addition of the cornflour slurry thickens the drink as it simmers gently, followed by stirring in chopped milk chocolate until fully melted and incorporated into a glossy, creamy texture.

This creates a hot chocolate with a noticeably thicker, richer body compared to traditional recipes. The flavors are rounded by the balance of sugar and natural cocoa bitterness combined with the smoothness of melted milk chocolate. The beverage stays warm longer if poured into a preheated mug, enhancing the drinking experience. It can be topped with whipped cream or preferred garnishes.

Careful whisking during the addition of the cornstarch slurry prevents lumps. Avoid boiling after adding thickening agents to prevent scalding the milk or forming a skin. The recipe’s method ensures a smooth, thickened cocoa that offers a comforting and satisfying mouthfeel suited for cold days or as a treat.

Ingredients

Servings

For the hot chocolate

  • 240 millilitres milk full fat or semi-skimmed, 1 US cup
  • 2 tablespoons cocoa powder unsweetened
  • 2 tablespoons sugar
  • 100 grams milk chocolate 3.5oz, roughly chopped
  • teaspoons cornstarch

Instructions

  1. In a small bowl, combine the cornflour with about 3 tablespoons of the milk you've measured out. Whisk until smooth and lump-free, then set aside.
  2. In another small bowl, whisk together the cocoa powder and sugar until well combined.
  3. Heat the milk in a saucepan over medium heat until it begins to simmer.
  4. Reduce the heat to low and whisk in the cocoa and sugar mixture. Continue whisking for 1 minute until the sugar dissolves and the mixture is smooth and lump-free.
  5. Stir in the cornflour slurry and whisk vigorously for 1 minute until the mixture thickens slightly.
  6. Finally, add in the roughly chopped chocolate pieces. Keep whisking for 1–2 minutes until the chocolate has melted completely and the hot chocolate is thick and glossy.
  7. Pour into a mug immediately and finish with whipped cream or your favourite toppings.

Notes

  • Whisk continuously when adding cornflour slurry to keep the hot cocoa smooth and lump-free.
  • If lumps develop, use a stick blender briefly to restore smooth texture.
  • Keep heat low after the initial simmer to avoid milk scalding or skin formation.
  • Warm your serving mug before pouring to help retain temperature longer.
