Honey Pear Cake (Easy and Delicious)

Honey Pear Cake blends a buttery, lightly sweetened cake batter with slices of ripe pear arranged on top and sprinkled with Demerara sugar. The bake yields a moist crumb beneath a golden, caramelized fruit topping, accented by honey’s subtle sweetness. This cake suits those seeking a home-baked dessert with fresh fruit and a tender texture.

Description

Honey Pear Cake relies on combining well-aerated butter and sugar with flour, baking powder, salt, eggs, and vanilla to create a soft, fluffy cake base. Slices of peeled and cored ripe pears are layered atop the batter in an 8-inch round pan, sprinkled with Demerara sugar to encourage caramelization. The cake bakes about 45 minutes at 350°F until risen and golden, with a clean cake tester indicating doneness.

The pears add moisture and a gentle fruity sweetness that complements the honey incorporated into the topping. This cake balances a tender crumb against juicy baked fruit, enhanced by the coarse sugar’s slight crunch. The use of quality butter and ripe pears emphasizes natural flavors without added complexity.

This cake suits casual teatime servings or dessert alongside mild accompaniments such as cream or yogurt. It is best enjoyed freshly baked and cooled slightly to allow the topping to settle and the flavors to meld.

The recipe notes suggest using an 8-inch round or 7-inch square pan for ideal thickness and even baking.

Ingredients

Servings
  • 1 c flour all purpose/plain
  • 1 tsp baking powder
  • 1 pinch salt
  • ¾ c butter good quality
  • ¾ c sugar
  • 3 egg organic
  • 1 tsp vanilla
  • 2 medium ripe (but not too soft) pears (about 170 g each)
  • 2 Tbsp demerara sugar divided
  • 2 Tbsp honey good quality

Instructions

  1. Preheat oven to 350 F (175 C)
  2. Grease and flour an 8" round springform pan

Prepare the Cake Batter

  1. Sift the flour, baking powder and salt together.
  2. In another large bowl (or stand mixer) cream the butter and sugar until light and fluffy.
  3. Add an egg and mix in. Then about a third of the flour mixture and blend well, continue with the other two eggs and rest of the flour and the vanilla.
  4. Spoon the mixture into the prepared pan.

Prepare the Pears

  1. Peel and core the pears.
  2. Cut the pears into wedges (about 12 slices from each pear).

Assemble the Honey Pear Cake

  1. Arrange the pear slices on top of the cake. Depending on the size of the pear, you may not use all of the slices.
  2. Sprinkle one tablespoonful of Demerara sugar on top of the cake.

Bake the Cake

  1. Place the cake pan into the preheated oven for about 45 minutes, or until the cake is risen, golden brown and a cake tester comes out clean.
  2. Allow to cool for 10 minutes then remove the from the pan.

Finish the Honey Pear Cake

  1. Warm the honey slightly, then brush over the top of the entire cake.
  2. Finally, sprinkle with another tablespoonful of Demerara sugar (or less). That's it, you have just made a delicious cake!
  3. Slice and serve on its own, or with cream or even custard!

Notes

  • Use an 8-inch round or 7-inch square pan for proper cake thickness and baking.
