Horseradish Sauce Recipe

This Horseradish Sauce blends crème fraîche or sour cream with prepared horseradish, mayonnaise, and seasoning ingredients to create a creamy, tangy condiment with a sharp horseradish bite. The sauce is chilled for several hours before serving to develop flavor and mellow the horseradish strength. It's a versatile sauce suitable for enhancing meats, sandwiches, or vegetables.

Description

The recipe combines crème fraîche—or sour cream as an alternative—with prepared horseradish, mayonnaise, white vinegar, Dijon mustard, Worcestershire sauce, salt, pepper, and chopped chives. Mixed well and refrigerated for at least four hours, the sauce develops a balanced flavor with a creamy texture and sharp, pungent horseradish notes.

The horseradish intensity can be adjusted by starting with less and tasting before adding more. Omitting chives during refrigeration extends freshness; they can be added just before serving for color and subtle onion flavor. The sauce keeps well refrigerated for one to two weeks without chives.

This sauce is useful as a tangy accompaniment to beef dishes, smoked fish, or cold cuts.

  • 1/2 cup crème fraîche , can substitute sour cream (crème fraîche is richer, thicker, and less tangy)
  • 2-3 tablespoons horseradish drained (depending on how strong you want it. NOTE: be sure to buy what's labeled "prepared" horseradish, not horseradish "sauce", prepared
  • horseradish root fresh is much more intense than prepared; use half the amount, alternatively use 1 tablespoon finely grated fresh
  • 2 tablespoons mayonnaise
  • 1 teaspoon white vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper freshly ground
  • 1 tablespoon chives finely chopped

Instructions

  1. Combine all ingredients in a small bowl, cover and refrigerate for at least 4 hours before serving. I recommend starting with 2 tablespoons of horseradish, taste it, and add an additional tablespoon if you prefer it stronger (note, that flavor will intensify the longer it sits).Will keep for up to a week or 2-3 weeks if you omit the chives and add them just before serving.
