Hot Dog Pasta Recipe

This epic hot dog pasta recipe is my all time childhood favorite. It sure isn't fancy, but, it's on the table in about 20 minutes, it's made with simple, everyday ingredients, and it's creamy and sinfully delicious. It's the perfect lazy dinner, made in the Instant Pot, sure to become your familia's hectic week go-to dinner!

Ingredients

  • 2 tbsp butter
  • 1/2 large onion diced
  • 3 cloves of garlic minced OR 1 Tbsp Brazilian Sofrito
  • 16 oz short pasta I used rotelle
  • 32 oz jar of Marinara sauce** I used costco brand
  • 2.5 cups water**
  • 2 cups heavy cream
  • 2x 16oz package of hot dogs sliced
  • 2 cups olives pitted and sliced
  • 1/4 cup parsley finely minced
  • Parmesan cheese to taste optional

Instructions

  1. Put your instant pot on saute mode and melt the butter.
  2. When the butter is melted, add the onions and saute until they are transparent - about a minute.
  3. Add the garlic, and saute another minute or two.
  4. Turn off the pot, and add the pasta, the marinara sauce, the water, the cream, the hot dogs, and the olives. Give it all a big stir, and arrange everything so that everything or MOST of everything is covered with liquid.
  5. Close the pot and turn on manual mode for 6 minutes.
  6. After 6 minutes, release the pressure manually and carefully. Open the pot. Give everything a big stir, add the parsley, and stir again.
  7. Serve with more parsley and a sprinkling of parmesan cheese.

Notes

  • **Please note that, some brands of marinara may be thicker than others. If that's the case, you may need to add an extra half a cup of water to the IP to avoid the burning warning.
  • ***If you do get a burning warning, turn off the pan, and safely open it. Add the extra water, and try again.
