How to Clarify Butter | Ghee Butter

Clarifying butter involves gently melting unsalted butter to separate milk solids and water from the pure butterfat, producing clarified butter or ghee. This process yields a clear, golden-fat layer suitable for cooking with higher smoke points and extended shelf life. The method includes skimming impurities during gentle heating and separating the clarified layer carefully once settled.

Description

To clarify butter, melt butter carefully either on the stovetop over low-medium heat or in a microwave at medium power. As the butter melts and heats, impurities and milk solids rise to the surface. Removing these periodically using a ladle helps clarify the butter.

After heating, the butter separates into layers: a golden clear top layer and a white milky sediment below. Carefully pouring off the top golden layer while leaving the solids behind yields clarified butter or ghee, which has a higher smoke point and longer shelf life than regular butter.

This clarified butter can be used immediately in cooking, sautéing, or baking, or stored in the refrigerator. It requires re-melting before reuse, and the removal of milk solids reduces the risk of burning in high-heat applications.

  • 200 g butter

Instructions

  1. Place the butter in the pot or the microwave dish.
  2. Place the pot on the stove over low-medium heat and allow to cook for approx. 20 minutes, be careful not to burn it.
  3. Or place the dish in the microwave and heat on medium for about 10 minutes.
  4. As you are heating it, every few minutes skim the surface with a ladle and remove any impurities.
  5. Once you’ve finished heating it remove the pot or dish from the heat and allow the butter parts to separate and form individual levels, (see photo).
  6. Skim off any more impurities and then carefully pour off the top golden layer and discard the white bottom layer.
  7. The clarified butter can be used immediately or stored in the fridge (will require re-melting upon next use).
