Greek Chicken Kabobs

Greek Chicken Kabobs feature marinated chicken thigh chunks seasoned with lemon juice, garlic, and a blend of Mediterranean herbs like oregano, basil, and thyme. The marinade tenderizes the chicken while infusing bright and herbal flavors. Grilling the skewered chicken on medium heat creates a charred, juicy texture. This dish offers a balanced combination of citrus and spices, making it suitable for outdoor grilling or casual dinners. The recipe's straightforward marinating and grilling process ensures the chicken remains tender and flavorful.

Description

Greek Chicken Kabobs combine boneless, skinless chicken thigh pieces with a marinade of olive oil, freshly squeezed lemon juice and zest, paprika, dried oregano, basil, thyme, minced garlic, and diced shallot. The salt and pepper seasoning enhances the herbal, citrus-infused profile. The chicken is marinated for several hours or overnight, allowing the flavors to deeply penetrate.

Cooking is done by threading the chicken onto skewers, brushing with olive oil, and grilling over medium heat for about 10 minutes, turning occasionally until fully cooked. This method results in a nicely charred exterior with a juicy interior, thanks to the chicken thigh's natural fat content. The herbs and lemon give the kabobs a slightly tangy and aromatic note that complements the savory meat.

These kabobs can be served immediately off the grill, paired with rice, salad, or warm pita bread. Their savory, tangy flavor profile makes them versatile for lunch or dinner options. The recipe is well suited for outdoor grilling or indoor grill pans.
