How to make a seed loaf
Description
This seed loaf recipe balances whole wheat flour and rolled oats as the base with generous amounts of seeds including sunflower, flax, chia, and pumpkin seeds, along with wheat germ for added nutrition. The inclusion of baking powder and baking soda provides lift in conjunction with the acidic yoghurt in the wet ingredients.
Wet ingredients such as plain yoghurt, sunflower oil, honey, and salt are combined and mixed into the dry seed and flour mixture to form a thick batter-like dough. The loaf bakes at 180°C for 20 minutes, then is tempered at 150°C for an hour or until golden and cooked through, producing a dense but moist texture with a crunchy seed crust.
This bread offers rich seed flavors and substantial texture making it suitable for breakfast, sandwiches, or as a hearty accompaniment to meals. The natural sweetness from honey and moisture from yoghurt contribute to a tender crumb.
Cooling before slicing ensures clean cuts and allows the loaf to set. Using parchment-lined loaf tin prevents sticking and aids even baking.
