This seed loaf recipe balances whole wheat flour and rolled oats as the base with generous amounts of seeds including sunflower, flax, chia, and pumpkin seeds, along with wheat germ for added nutrition. The inclusion of baking powder and baking soda provides lift in conjunction with the acidic yoghurt in the wet ingredients.

Wet ingredients such as plain yoghurt, sunflower oil, honey, and salt are combined and mixed into the dry seed and flour mixture to form a thick batter-like dough.   • 250 g whole wheat flour 1.5 cups
  • 100 g rolled oats 1 cup
  • 75 g sunflower seeds 1/2 cup
  • 50 g Flax Seed aka linseeds, 1/3 cup
  • 35 g chia seeds 1/4 cup
  • 75 g pumpkin seeds 1/2 cup
  • 50 g wheat germ 1/2 cup
  • 1.5 teaspoons baking powder
  • 1 teaspoon baking soda
  • 500 ml plain yoghurt 2 cups
  • 1/2 cup sunflower oil
  • 4 tablespoons honey
  • 1 teaspoon salt

Instructions

  1. Pre-heat the oven to 180°c and line a loaf tin with baking paper.
  2. In a large bowl, combine the flour, oats, seeds, wheat germ, baking powder and baking soda and mix well.
  3. In a separate bowl, mix together the yoghurt, oil, honey and salt.
  4. Pour the wet ingredients into the dry and mix well to combine.
  5. Transfer the mixture to the prepared loaf tin then bake at 180°c for 20 minutes then turn down to 150°c and continue baking for 1 hour until the loaf is golden brown and a skewer inserted comes out clean.
  6. Remove from the oven and allow to cool before serving.
