Ingredients

Servings
  • 3 cups old-fashioned rolled oats
  • 3 tablespoons brown sugar
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • cup honey melted
  • ¼ cup canola oil coconut oil or a neutral-flavored oil will also work
  • 2 large egg whites beaten well
  • 1 teaspoon vanilla

Add Ins

  • ¼ cup nuts of choice
  • ¼ cup dried fruit of choice

Instructions

  1. Preheat the oven to 300°F and line a cookie sheet with parchment paper. In one large bowl, mix together the oats, brown sugar, salt, and cinnamon.
  2. Once combined, add the fruit and nut combination of choice.
  3. In a second smaller bowl, combine the melted honey, canola oil, egg whites, and vanilla. Once thoroughly mixed, pour the honey mixture over the oat mixture. Mix until combined.
  4. Place onto the baking sheet and press firmly into clumps. Bake for 20 to 30 minutes until the clusters are light golden in color.
  5. Remove and let cool completely, then break into pieces.
  6. Store in a closed container for up to a week, or freeze for up to 3 months.

Notes

  • You can make a layer of granola that you break up, or drop the mixture into little piles to make clusters and bake like that.
  • Nutrition is for the entire batch and will vary depending on what nuts and fruit you add to this recipe
