Ice Cream Sandwich Cake

Ice Cream Sandwich Cake layers classic ice cream sandwiches with hot fudge sauce and a whipped Oreo topping, then freezes it to create a no-bake dessert. The cake contrasts creamy, cold layers of whipped topping and ice cream with crunchy Oreo pieces and rich fudge, forming a textured treat that is easy to assemble and serve chilled.

Description

This Ice Cream Sandwich Cake starts by layering full-size ice cream sandwiches in a baking pan and alternating them with hot fudge sauce and a whipped topping combined with chopped Oreos. The whipped topping adds a light, creamy texture contrasted by the crunch of Oreo cookie bits mixed throughout. The hot fudge contributes a thick, chocolatey richness that softens slightly over time, melding flavors together.

The assembly requires no baking; once layered, the assembled cake is covered and frozen for several hours to firm up. The resulting dessert offers a balance of creamy ice cream, smooth whipped topping, crunchy cookie bits, and sticky, chocolate fudge. Cutting creates a layered look with distinct textures and flavors.

This cake can be sliced for casual gatherings or served as a sweet finish to summer meals. It’s simple yet indulgent and works well as a make-ahead dessert that holds in the freezer until needed.

Using a jarred fudge sauce like Smucker’s helps with ease of spreading; warming the fudge slightly before layering makes it easier to apply evenly. The cake pans neatly using parchment paper for easy removal and cleanup.

Ingredients

Servings
  • 14 Oreo cookies chopped into small pieces
  • 8 ounces whipped topping Cool Whip or TruWhip, thawed, frozen
  • 14 ice cream sandwiches full-size
  • 1 jar hot fudge sauce 11-ounces

Instructions

  1. Line a 9x9x3-inch baking pan with parchment paper.
  2. In a medium bowl, combine about ⅔ of the chopped Oreos with the whipped topping until just combined. Set aside. Reserve the remaining Oreos.
  3. Place half of the ice cream sandwiches in an even layer in the baking dish. You will need to cut a couple of the ice cream sandwiches to fit them snugly into the dish.
  4. Evenly spread half of the fudge sauce onto the ice cream sandwiches. Follow with a layer of Oreo whipped topping. Repeat layers. Sprinkle the top of the cake with the remaining chopped Oreos. Cover and freeze for at least 3 hours.

Notes

  • Use a jarred hot fudge sauce or your favorite brand; warm slightly to spread more easily over ice cream sandwiches.
  • Line the baking pan with parchment paper to allow easy removal of the cake after freezing.
  • Freeze the assembled cake for at least 3 hours before serving to allow it to set firmly.
