Iced Coffee with Pashmak

A recipe for Iced Coffee with Pashmak from the cookbook, Veganistan! This fun drink pairs iced mocha with fluffy pashmak and carob syrup.

Ingredients

Servings
  • 1 hot coffee (around 3 1/2 tablespoons, i.e. a café lungo)
  • 2/3 cup vegan milk this is best with a really creamy number, 150 milliliters, of your choice
  • 1 tablespoon carob syrup
  • 3-4 ice cubes
  • pashmak Persian cotton candy, but do substitute cotton candy if you can't get the real thing, big clump

Instructions

  1. Place the first four ingredients (coffee, vegan milk, carob syrup, ice) in a blender and give them a quick whizz.
  2. Pour the coffee into a fancy glass and top with the pashmak.
  3. Serve immediately.

Notes

  • (One of Sally's bartenders twists the sugar strands into long ears, dots it with a couple of carob syrup eyes, and creates a long-eared owl.)
