Cookie Ingredients

  • 2 cups  all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4  teaspoon salt
  • 1/2 cup  unsalted butter softened
  • 3/4 cup  granulated sugar
  • egg
  • 1/3 cup orange juice
  • 1 1/2 teaspoons vanilla extract
  • Zest of two oranges

Orange Icing:

  • 2 cups  powdered sugar
  • 3-4  Tablespoons orange juice
  • Zest of one orange

Instructions

To Make the Cookies

  1. Preheat oven to 350°F and prep a large cookie sheet with a non-stick silicone baking mat.
  2. In a medium mixing bowl, whisk together flour, baking powder and salt and set aside.
  3. In the bowl of a stand mixer, cream butter, sugar and orange zest until fluffy (about 3 minutes).
  4. Add the egg, orange juice, and vanilla, mixing as you go.
  5. Reduce mixer to low speed and slowly add in the dry ingredients. Continue mixing until well incorporated, scraping the sides of the bowl as needed.
  6. Roll dough into balls, about 1 large Tablespoon of dough each. Place on  your prepared baking sheet, about 1-2 inches apart.
  7. Gently press down the tops of the dough balls so they're flatter in shape.
  8. Bake for 8-10 minutes, watching closely, until the cookies are just beginning to turn golden brown on the edges.
  9. Remove from oven and allow cookies to cool on the pan.

To Make the Icing:

  1. Add icing ingredients to a large mixing bowl and whisk vigorously to combine.
  2. Once cookies have cooled, drizzle icing on top of the cookies and allow to set.
