INCREDIBLE Banana Coffee Cake

This Banana Coffee Cake combines ripe mashed bananas with butter, brown sugar, and sour cream to create a moist cake batter topped with a cinnamon-streusel topping of flour, brown sugar, butter, and cinnamon. The cake bakes to tender crumb with a sweet and slightly spiced crust, making it a classic coffee cake that pairs well with breakfast or an afternoon snack.

Description

The banana coffee cake begins by creaming softened butter with brown and white sugar, then adding eggs, vanilla, sour cream, and mashed bananas to build moisture and flavor. Dry ingredients including flour, salt, baking powder, and baking soda are combined separately before being gently folded into the wet mix to preserve tenderness. The batter is spread into a prepared pan, ready for a crumbly topping.

The topping consists of flour, brown sugar, softened butter, and cinnamon, sprinkled evenly on the batter. Baking until a toothpick inserted in the center comes out clean yields a rich cake with a soft banana-infused interior and a crunchy cinnamon topping.

The cake suits breakfast or a sweet snack with coffee or tea. Watch closely near the end of baking time to avoid overcooking, as oven temperatures vary.
