Indian Butter Cauliflower Curry

Butter Chicken is a popular Indian dish. And for good reason, the sauce is rich, creamy & flavorful! In this Cauliflower Curry recipe, the same delicious sauce is poured over roasted cauliflower to make an incredible vegetarian dish!

  • 2 tbsp garam masala
  • 2 tsp Turmeric
  • 1 tsp cayenne pepper
  • 1 tsp ground cumin
  • ½ tsp salt
  • ½ cup unsalted butter divided
  • 1 cup sweet onion diced
  • 1 tbsp garlic minced
  • 1 tsp fresh ginger grated
  • 2 tsp lemon juice
  • 8 oz can tomato paste
  • 15 oz can tomato sauce
  • 1 cup coconut cream
  • 1 cup PLAIN yogurt
  • 1 head cauliflower app 24 oz - cut into florets
  • ¼ cup fresh cilantro chopped

Instructions

  1. Preheat the broiler on the oven to low.
  2. In a small bowl, combine the garam masala, turmeric, cayenne pepper, ground cumin and salt.
  3. Melt 2 tbsp butter in a large saucepan on the stove over medium high heat.
  4. Add the onion, saute 4-5 minutes.
  5. Add the garlic and ginger, saute for an additional minute.
  6. Stir in another ¼ cup butter, 2 ½ tbsp of the spice mix you made earlier, lemon juice and tomato paste, saute for 1 minute.
  7. Add the tomato sauce, coconut cream, and plain yogurt, bring to a rapid simmer.
  8. Reduce the heat, cover and simmer for 10 minutes.
  9. While the sauce is simmering, spread the cauliflower out evenly on a baking sheet.
  10. Melt the remaining 2 tbsp butter and drizzle over the cauliflower, toss to coat, then sprinkle the remaining spice mix over the cauliflower and toss to coat.
  11. Place the cauliflower in the oven under the broiler on high for 4-6 minutes.
  12. Remove the cauliflower from the oven and add to the butter sauce.
  13. Simmer for 5-10 minutes.
  14. Top with fresh chopped cilantro.
  15. Serve over rice or with naan.
