Instant Pot Chicken Stock Recipe

Make flavorful chicken broth in your Instant Pot using leftover chicken bones. It's easy, reduces food waste, and creates a perfect base for soups, stews, and sauces.

Ingredients

  • 2 1/2 pound chicken carcass
  • 2 medium carrots chopped
  • 1 onion cut in half
  • 2 tablespoons garlic cloves
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon ground pepper
  • 1 teaspoon salt
  • 8 cups water enough water to come to 1 inch below the MAX fill line
  • bay leaves
  • herbs like thyme and rosemary

Instructions

  1. Add all of your ingredients to your Instant Pot.
  2. Close the lid on your Instant Pot. Close the sealing valve.
  3. Set your IP to high pressure for 120 minutes. It should take about 20 minutes to come to pressure.
  4. Let the pressure release naturally. It should take about 20 minutes to release.
  5. Strain your broth through a strainer. Seal in an airtight container or jar. You can also pour it in an ice cube tray and freeze the cubes until you're ready to use.

Notes

  • Start with cold water when adding it to your Instant Pot. 
  • Be mindful of the MAX fill line in your Instant Pot. Overfilling can lead to a messy kitchen and an unevenly cooked stock. Keep the water level about 1 inch below the MAX fill line to avoid any spills. 
  • After straining your stock, let it cool in the refrigerator. The fat will rise to the top and solidify, making it easy to skim off
