Instant Pot Cilantro Lime Rice

Instant Pot Cilantro Lime Rice uses long grain rice cooked under pressure with water, then finished with fresh lime zest, chopped cilantro, lime juice, and salt for a bright and fragrant side dish. The pressure cooking yields tender and fluffy rice that carries the citrus and herb notes well. This rice complements Mexican meals or can be enjoyed on its own for a fresh, tangy flavor.

Description

This recipe starts with rinsing and combining long grain rice and water in the Instant Pot, ensuring the rice is fully submerged to prevent sticking or burning. The rice cooks under high pressure for a short duration, followed by a natural pressure release to finish cooking gently. Fluffing the rice after cooking lightens its texture.

The final step incorporates lime zest, chopped cilantro, lime juice, and salt into the cooked rice, imbuing it with fresh citrus aroma and herbal brightness. The layering of these flavors after cooking preserves their freshness and prevents bitterness from prolonged heat exposure.

Instant Pot Cilantro Lime Rice serves as a vibrant side to grilled meats, tacos, or beans and adds a fresh element to balanced meals. The recipe note mentions it can be adapted easily to stovetop cooking using the same finishing ingredients, making it versatile for kitchens without pressure cookers.
