Irish Cream Fudge
Description
This Irish Cream Fudge recipe starts by gently heating semi-sweet chocolate chips, sweetened condensed milk, and Irish cream liqueur together over low heat while stirring to a smooth consistency. Vanilla extract and a pinch of salt add depth to the flavor. Once melted and well blended, chopped walnuts can be folded in for added texture. The mixture is then spread evenly into a lined pan and refrigerated for several hours until set firm.
The result is fudge with a creamy, slightly boozy character from the Irish cream, complemented by chocolate’s sweetness and the crunch of walnuts if included. Preparing it in an 8 or 9-inch pan yields good thickness and easy slicing.
This fudge is best served chilled or at room temperature, and storing it in an airtight container helps retain freshness for up to a week. Using gluten-free liqueur and ingredients ensures the fudge is suitable for gluten-sensitive individuals.
Refrigerate the fudge well to achieve the right firmness before cutting. The slow melting and constant stirring prevent lumps and ensure a silky texture. Using parchment or foil lining simplifies removal from the pan and cleanup.
Ingredients
- 4 cups semi-sweet chocolate chips or chopped chocolate, 24 ounces
- 1 cup sweetened condensed milk
- ⅔ cup Irish cream liqueur
- ½ teaspoon vanilla extract
- pinch salt
- 1 ½ cups walnuts optional, chopped
Instructions
- Line an 8"x8" or 9"x9" pan with a piece of parchment paper or foil.
- Mix together all the ingredients, except for the walnuts, in a large saucepan and then turn the heat to low. Using a silicone spatula, stir frequently until no lumps of chocolate remain, being sure to scrape the bottom of the pan often.
- It will take about 7-10 minutes. Once well combined, stir in the walnuts, if using.
- Scoop the fudge into the lined pan and use the spatula to even it out.
- Refrigerate for 3-4 hours or until firm before cutting into pieces.
Notes
- Store the fudge in an airtight container for up to one week to maintain quality.
- Make sure all ingredients, especially Irish cream, are gluten-free if required.
- The Carolans brand is recommended for gluten-free Irish cream liqueur.
