  • ¾ cup granulated sugar
  • ¼ cup ½ stick unsalted butter, melted
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 ½ cups pecan halves or pieces
  • 1 egg beaten (for egg wash)

Instructions

  1. Prepare puff pastry: Thaw the puff pastry according to package directions. Lightly flour a clean surface. Gently unfold the puff pastry sheet and lightly roll it out to slightly enlarge it (about 12x12 inches).
  2. Cut out shapes: Using a round cookie cutter (about 2 ½ inches in diameter) or a glass, cut out circles from the puff pastry. You can also use other shapes if desired.
  3. Prepare muffin tin: Lightly grease a mini muffin tin.
  4. Shape pastry cups: Gently press each circle of puff pastry into a muffin cup, forming a small cup.
  5. Make filling: In a medium bowl, combine the corn syrup, granulated sugar, melted butter, vanilla extract, and salt. Whisk until well blended. Stir in the pecan pieces.
  6. Fill pastry cups: Spoon about 1-2 tablespoons of the pecan pie filling into each pastry cup.
  7. Egg wash: Lightly brush the edges of the puff pastry with the beaten egg. This helps them to brown nicely.
  8. Bake: Bake for 20-25 minutes, or until the puff pastry is golden brown and the filling is set.
  9. Cool: Let the pecan pie bites cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
