Ingredients
For the Dough
- 4 cups all-purpose flour , sifted
- 1 cup cold margarine or butter , cut into small cubes
- 1/2 cup cold water
- 2 teaspoons Turmeric
- 1 teaspoon curry powder
- 1 teaspoon salt
- 1 tablespoon granulated sugar
For the Filling
- 1 pound ground beef
- 1 small carrot
- 1 onion
- 3 cloves garlic
- 2 green onions
Seasoning for the Filling
- 3 tablespoons neutral vegetable oil
- 1/2 teaspoon curry powder
- 1 teaspoon Turmeric
- 1/2 teaspoon thyme
- 1/4 teaspoon freshly grated nutmeg
- 1/4 teaspoon ground ginger
- A pinch of chili powder
- 1 teaspoon paprika
- 2 tablespoons browning sauce
- a pinch of allspice
- 1 teaspoon salt
- freshly ground black pepper
- 2/3 cup water
- 1/4 cup breadcrumbs
For the Egg Wash
- 1 egg

Instructions
Dough
- Pour the flour into a large mixing bowl. Add the salt, curry powder, and turmeric.
- Mix well, then add the butter or margarine cubes.
- Using your fingertips, rub the fat into the flour until the mixture resembles coarse crumbs.
- Add the cold water and form a dough ball. Be careful not to overwork the dough.
- Wrap the dough in plastic wrap and refrigerate for 1 hour.
Filling
- Finely chop the onion, garlic, green onions, and carrot together.
- In a skillet, heat the oil over medium heat. Add the chopped mixture and sauté for 5 minutes.
- Add the ground beef and all the spices. Mix well and cook for 5 minutes, stirring regularly.
- Add the browning sauce and breadcrumbs, and mix well.
- Add the water and let it simmer for 10 minutes over medium heat.
Shaping and Baking
- Preheat the oven to 350°F (convection) or 400°F (conventional).
- Take the dough out of the refrigerator and roll it out to about 1/8 inch thick.
- Using a bowl or a 6-inch cutter, cut out circles from the dough.
- Place about 2 tablespoons of filling in the center of each circle (do not overfill so the dough can easily be folded over).
- Dip your finger in cold water and lightly dampen the edge of the dough circle.
- Fold the circle in half to form a semi-circular patty and press the edges together with a fork to seal.
- Brush each patty with the beaten egg using a pastry brush.
- Place the patties, spaced apart, on a baking sheet lined with parchment paper.
- Use a toothpick to gently poke each patty 2 or 3 times.
- Bake for 20 to 25 minutes or until golden brown. Enjoy!
