Ingredients

  • 2 tbsp unsalted butter
  • ½ medium yellow onion chopped
  • 1 tbsp garlic minced
  • 3 cups low sodium chicken broth
  • 3 cups broccoli florets
  • 1 cup heavy cream
  • 4 ounces cream cheese cubed
  • 8 ounce cheddar cheese block but then shredded
  • turkey bacon crumbles
  • salt and pepper to taste

Instructions

  1. Heat a 4qt dutch oven on a medium flame; add butter. Once the butter is melted add onion and garlic. Saute for 3-5 minutes until the onions turn translucent.
  2. Stir in the chicken broth along with the broccoli. Cook for 2 minutes. Next, Stir in the heavy cream and cream cheese. Cook the soup further until the cream cheese is melted and well combined. Season the soup with salt & pepper.
  3. Slowly stir the cheddar cheese and allow the cheese to melt in the heat. After the cheese is completely melted, switch off the flame.
  4. Transfer the broccoli soup to a bowl and top with crumbled turkey bacon and cheddar cheese. Serve the soup warm.
