Keto Candied Pecans
Description
Keto Candied Pecans feature pecan halves coated in a caramel-like glaze made from butter, erythritol sweetener, and a touch of brandy. Butter melts with erythritol over medium heat until golden and bubbling, then brandy is stirred in off the heat followed by folding in the pecans. Spreading them out on parchment paper allows the coating to set quickly. The erythritol keeps the coating without sugar, and the brandy prevents recrystallization without noticeable alcohol taste.
The finished pecans are crunchy and sweetened without traditional sugar, making them suitable for keto diets. The coating adds a rich buttery flavor harmonized by the drink’s subtle aroma. The method of adding alcohol late in cooking is important for the texture.
Serve these candied pecans as a snack or a crunchy salad topping. They keep well in an airtight container at room temperature for several weeks. For firmer texture, some roast the pecans dry beforehand. Using unsalted butter would warrant adding a pinch of salt to balance flavor. Variations include adding cinnamon or vanilla extract for extra aroma.
Storage tips include keeping these in an airtight container at room temperature. Note that erythritol-based coatings harden better than some other sugar alternatives, which may require freezing.
Ingredients
- 2 cups pecan halves 200g, room temperature
- ½ cup erythritol 100g, or any erythritol based 1:1 sugar alternative, golden
- 2 tablespoon butter salted, 30g
- ½ tablespoon brandy or vodka ***
Instructions
- Melt the butter in a saucepan over low heat. Add the sweetener and turn up to a medium heat.
- Stir until the sweetener has melted fully. The mix should be bubbling and has turned a golden brown.
- Take the pot off the heat. Add the Brandy and stir. Then, add the pecans and fold through with a spoon or spatula until they are covered evenly.
- Spread the pecans out on a cookie sheet lined with parchment paper. Let cool until firm. This only takes a few minutes.
Notes
- Use salted butter or add a pinch of salt for balanced flavor if using unsalted butter.
- Alcohol (brandy or vodka) is added after removing from heat to prevent recrystallization of erythritol; the amount is small enough not to affect taste.
- Optionally roast pecans before glazing for extra flavor by oven (5-7 minutes at 200C/400F) or dry pan roasting on low heat.
- Store candied pecans in an airtight container at room temperature; they remain fresh for several weeks.
- Other sweeteners like xylitol or allulose may require freezing to keep coating firm, as they remain sticky at room temperature.
- Add 1 teaspoon cinnamon or vanilla extract to the sugar mixture for flavor variations.
