Kjötsúpa (or Icelandic meat soup) is the national dish of Iceland, mostly made from sheep, lamb, or mutton and a collection of root vegetables.

Ingredients
- 3 quarts water
- 4 lb lamb shanks or shoulders with the bone (soupmeat)
- 2 teaspoons salt
- 1 teaspoon white pepper
- 6 carrots
- 8 potatoes
- 2 Rutabagas
- ¼ cabbage head
- 1 large yellow onion
- ½ cup soup herbs
Instructions
- Rinse the meat with water and put it into a pot with 3 quarts (3 liters) of water. A brown froth will appear on the top, and needs to be removed with a spoon.
- Boil the soup for an hour at least to make sure the meat is tender and the stock is good.
- While the meat is boiling, prepare the vegetables. All the pieces should fit into a tablespoon so cut the vegetables fairly small.
- After at least an hour of boiling the meat, put the soup herbs and the vegetables into the pot with a little pepper and salt.
- Let the soup boil for at least 20 minutes more.
Notes
- The soup is best served the day after, and can be kept for up to 5 days in a closed container in the refrigerator. Just warm up the soup that is going to be served each time and not the whole soup.
