Knock our Socks Off Cornbread

Knock our Socks Off Cornbread is a moist and tender cornbread that incorporates separated egg yolks and whipped egg whites for a delicate crumb. The batter mixes cornmeal with all-purpose flour, sugar, milk, and melted butter, producing a golden crust and soft interior with a hint of vanilla.

Description

This cornbread separates the eggs, adding the yolks to the wet ingredients along with milk, vanilla extract, and melted butter. The dry ingredients include cornmeal, flour, sugar, baking powder, and salt. After combining the wet and dry, whipped egg whites are folded in to add lightness and volume. The batter is poured into a greased 9x13 inch pan and baked until a toothpick comes out clean, which typically takes 26-28 minutes.

The finished cornbread features a rich texture with a subtle sweetness from the sugar and vanilla. Its tender crumb contrasts with a slightly crisp outer crust. This recipe, adapted from High Heels and Grills, delivers a classic-style cornbread suitable for serving alongside soups, chili, or barbecue dishes.
