This easy one-pot Lasagna Soup is ready in 25 minutes and made with juicy Italian sausage, tender noodles, herbs, and spices, in a tomato-based broth topped with two kinds of cheese! It's a delicious recipe the whole family will enjoy during soup season!

Ingredients
- 2 tablespoons olive oil
- 1 pound Italian sausage mild
- 1 small onion diced
- 2 cloves garlic minced
- 2 tablespoons tomato paste
- 5 cups chicken broth
- 28 ounce diced tomatoes 1 large can
- 1 teaspoon dried Italian seasoning
- ½ teaspoon salt
- ⅛ teaspoon red pepper flakes optional
- 8 ounces lasagna noodles broken into 1” pieces
- ½ cup mozzarella cheese shredded
- ¼ cup Parmesan Cheese grated
- fresh basil for garnish
Instructions
- In a large soup pot or dutch oven, add the olive oil and Italian sausage and cook over medium heat.
- Cook the sausage, breaking it into small pieces, for 5 minutes.
- Add the diced onion and cook for an additional 5 minutes, or until the onion is soft.
- Next, add the minced garlic and tomato paste and mix into the meat to combine and cook for another minute or so until the sausage is completely browned.
- Carefully pour in the chicken broth and stir well, scraping the bottom of the pot with a wooden spoon to remove any stuck on bits.
- Add the diced tomatoes, Italian seasoning, salt, and red pepper flakes (if using). Stir to thoroughly combine and bring the soup to a boil.
- Then add the lasagna noodles pieces and boil for 10-12 minutes or until the noodles are soft, stirring often so the noodles to not stick together.
- Add in the mozzarella and parmesan cheese or leave it out and garnish individual bowls
- Garnish with fresh basil leaves if desired.
Notes
- Store leftover soup in an airtight container in the refrigerator for up to 3-4 days.
- Use any cooking oil to help the sausage not stick to the pot while browning.
- Swap the Italian sausage for ground beef, ground turkey or ground sausage.
- Use hot Italian sausage for a spicier version.
- Add more chicken broth the soup is too thick after the noodles cook.
- Swap the chicken broth for beef broth or vegetable broth.
- Add diced green peppers or red bell peppers or other favorite veggies like zucchini or mushrooms.
- Use crushed tomatoes if you'd like smaller chunks of tomatoes.
- Add as much red pepper flakes as you'd like.
- Use any type of pasta you'd like
- Use Romano cheese or asiago cheese.
- Serve with a dollop of ricotta cheese or cottage cheese if desired.
