Lasagne Soup
Report
A fast food lasagne that will please the fussiest lasagne lover. Make this soup you won;t regret it. make sure you make the parmesan cream this makes it just like lasagne

Ingredients
- 300 gm beef mince
- 1/2 teaspoon salt
- 200 gm onion chopped into dice
- 150 gm capsicum chopped into dice
- 100 gm celery stick / chopped into dice
- 2 cloves garlic crushed
- 1/4 teaspoon salt to season the meat
- 700 ml tomato puree crushed tomato sauce
- 700 ml chicken stock
- 150 gm pasta sheets fresh flat 1/2 a packet is plenty
- 1 tsp oregano dried or 1 tablespoon fresh
- 80 ml olive oil 4 tablespoons
- 1/2 teaspoon salt extra if needed
Parmesan cream
- 125 ml cream I used thickened
- 100 gm parmesan cheese grated
- 20 gm Extra Cheese for sprinkling on top
- 150 ml extra stock to thin if necessary
- 25 GM parsley or basil chopped if you like green things
Instructions
- Heat the cream in a small pot along with the grated parmesan cheese on medium heat. Stir till melted and it just starts to simmer. Then pour into a bowl. It will thicken a little as it cools. Set aside.
- Heat a saucepan on high then add 1/2 the olive oil and the beef mince and fry breaking up as it fries and starts to brown well. Season with a little salt.
- Then add a tablespoon or two more olive oil and add the onion, garlic, celery, capsicum, and oregano to the meat in the pot and and saute till the vegetables are starting to soften. Add the tomato sauce (passata) the stock and salt to taste.
- Simmer on low for 10-15 minutes
- Then add the fresh pasta and cook for another 5-10 minutes or till the pasta is just cooked ( it will keep cooking).
- Scoop into 4 big bowls and top with parmesan cream and extra cheese and chopped herbs.
