This Lazy Day Cake, aka Hot Milk Sponge Cake, can be made quickly and has an All American taste!

Ingredients
CAKE
- 1 cup flour *all purpose
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 egg
- 1 cup sugar
- 1/2 cup milk
- 2 tablespoon butter
COCONUT TOPPING
- 1/2 cup brown sugar
- 3 tablespoon butter
- 2 tablespoon milk
- 1 cup coconut flaked
Instructions
CAKE
- Grease an 8x8 baking pan and preheat oven to 350 degrees.
- In a medium bowl, combine the flour, baking powder, and salt.
- In a small bowl using an electric mixer, beat eggs on high speed for about 4 minutes, or until thick.
- Gradually add in the sugar, beating with mixer until sugar has dissolved.
- Add mixture to the flour mixture and stir until just combined.
- Heat milk with butter until butter melts, stir into batter.
- Pour batter into prepared pan and place pan in preheated oven to bake 20-25 minutes.
COCONUT TOPPING
- While cake is baking, mix together the brown sugar and butter using a mixer until fluffy.
- Stir in the milk and coconut.
- Once cake has baked, remove from oven and put topping over warm cake.
- Place cake into oven and broil for about 3-4 minutes, or until top is golden.
- Serve!
