Leftover Potato Cakes In Air Fryer

Have you made potato cakes from mashed potatoes yet? These leftover potato cakes in the air fryer are delicious and just use a few simple ingredients alongside leftover mash.

Ingredients
- 600 g leftover mashed potatoes
- 200 g breadcrumbs
- 120 g grated cheese
- 2 Tsp chives
- salt & pepper

Instructions
- Load into a mixing bowl, all your ingredients and mix well with your hands.
- Then using your hands make into 8 equal sized potato patties.
- Add a layer of foil to the air fryer and add your mashed potato patties.
- Then air fry for 10 minutes at 180c/360f before serving.
Notes
- Bowl. You can also load your leftovers into a bowl after dinner and then leave them to cool in the fridge overnight before making mashed potato pancakes the next day.
